Pasta recipe starts with onions caramelized in slow cooker

When it comes to weeknight dinners, sometimes the shortest route is the long way around.
Which is to say, using the slow cooker often is the fastest and easiest way to get a great dinner on the table during your evening rush.
My only complaint about slow-cooker recipes is that too many require too much planning or too much prepping (and sometimes pre-cooking) of ingredients. I want recipes that let me dump stuff in, then walk away and forget about it until dinner.
That's what I came up with for this simple, but over-the-top-good pasta recipe. You let the slow cooker perfectly caramelize a whole mess of onions while you are at work. When you come home, you toss them with a few other ingredients, and in the time it takes you to boil pasta, you have dinner.
A food processor is the easiest way to slice this volume of onions. You could slice them the night before, then bag them and toss them into the refrigerator until the next morning.
As for the sun-dried tomatoes and arugula — I went with what I like. Improvise according to your family's tastes.

I keep that in mind when I’m bringing a dish to a potluck or when I’m hosting a cookout, since I don’t want to get too crazy and make something no one is willing to eat. But I know not everyone shares my adventurous food spirit and there are some folks whose dietary restrictions keep them from partaking in certain dishes. It’s almost Memorial Day, and you know what that means – a string of parties, picnics and potlucks that only begins to subside in September.
